Madam Butterfingers bakery special - Eggless chocolate orange and almond butter cake

 INGREDIENTS


65g Salted butter (soft)

20g Oil (any flavorless - I use sunflower)

60g Caster Sugar

80g Sweetened condensed milk

1 tsp Vanilla essence

1 Orange  zest (use Valencia orange/Kinnow/Mandarin orange)

100g Yogurt (Dahi)

40g Milk

135g All Purpose Flour (Maida)

2g Baking soda

3g Baking powder

50g Almonds (chopped and roasted at 180*c for 10 minutes)

80g Dark chocolate chips (I used chopped Amul dark chocolate 55%)


METHOD 


1. Grease and line a 6 inch round baking pan. Pre heat oven to 175*c.

2.  In a bowl, combine soft butter, oil, sugar, condensed milk, vanilla essence and orange zest. 

whisk on medium speed for 1-2 minutes until slightly pale in colour.

3. Add the yogurt and milk and whisk again for 30 seconds.

4. Sift in the flour, baking powder and baking soda. Fold it into the batter. Give one final mix with the hand mixer for only 10-20 secinds.

5. Fold in the roasted almonds and chocolate chunks.

6. Pour the batter into the greased cake tin and bake at 175*c for 30-35 minutes or until a toothpick inserted comes out clean. Rest covered under a kitchen towel for 30 minutes then demold and enjoy!
